A specially curated vegan gala dinner showcasing India’s culinary diversity, sustainability and mindful hospitality was hosted by Prime Minister Narendra Modi for BRICS leaders and dignitaries at Bharat Mandapam on Saturday.
The multi-course plant-based menu brought together flavours from different regions of India, beginning with Khandvi Mille-Feuille, featuring delicate steamed gram-flour rolls tempered with mustard, coconut and curry leaves, served with kesar mango, micro-greens and a light yoghurt-style dressing.
Khumb Galouti, comprising pan-grilled mushroom kebabs with mint pearls served on sheermal bread, was also part of the starters.
The main course featured Paneer Lababdar, with soft cottage-cheese-style cubes in a rich shallot-tomato gravy, and Gucchi Marmik, prepared with Himalayan morel mushrooms and asparagus cooked with saffron, raisins and mamra almonds.
The menu also included South Indian-inspired Carrot Bean Poriyal cooked in virgin coconut oil and finished with fresh coconut, along with Thakkali Belle Saaru, a light tomato-enriched toor dal broth with curry leaves.
Millet Pulao combining basmati rice and pearl millets, chilled Beetroot Raita and an assortment of Indian breads completed the savoury spread.
Dessert featured Old Delhi Fruit Cream with Jalebi, pairing seasonal fruits and lightly whipped cream with a crisp sweet fritter, while Shahtoot Phirni was served as a slow-cooked rice and milk pudding topped with sweet mulberries and gold leaf.
The gala dinner also featured the cultural presentation “Navarasa – The Universe of Shared Emotions”, celebrating emotions through India’s artistic traditions.
Another highlight was the BRICS Symphony, titled “One Rhythm, Many Cultures”, which brought together musicians from BRICS member and partner countries for a collaborative performance.
Drawing on diverse musical traditions and instruments, the symphony sought to reflect the cultural richness and spirit of togetherness within the BRICS family. Its integration with India’s classical dance traditions symbolised the shared bonds between diverse civilisations and conveyed the message of “Building a Better World Together” through cultural exchange.
