PAU student Dr Pooja Bhatt bags Best Oral Presentation Award

Dr Pooja Bhatt, a Ph.D student from the Department of Food and Nutrition, Punjab Agricultural University (PAU), has been conferred with the “Best Oral Presentation Award” for the paper entitled “Augmentation of mineral content, antioxidant activity and bioactive compounds using different drying techniques in Brocolli (Brassica Oleracea) microgreen sprinkler” authored by Pooja Bhatt, Sonika Sharma, Kiran Grover, Savita Sharma, Ajmer Singh Dhatt and Khushdeep Dharni.

She received the award during the International Conference on “Clinical Nutrition and Dietary Lifestyle” organized by the Universal Society of Food and Nutrition at Bangalore on May 20 and 21, 2022.

Dr Bhatt had pursued her Ph. D on the topic “Optimization of nutritional and biochemical composition and development of health foods-A study of microgreens” under the guidance of Dr Sonika Sharma, Associate Professor, Department of Food and Nutrition, PAU. Dr Sharma informed that microgreens are gaining popularity as a new culinary ingredient due to their high nutrient content.

Microgreens are excellent sources of Fe, Ca, Zn, Mg, Vitamin C and beta carotene (pro-vitamin A), meeting percent Estimated Average Requirements (EAR) of 536%, 373%, 264%, 228%, 38% and 20% for Indian adult.

Dr Kiran Grover, Principal Extension Scientist (Food and Nutrition) and minor advisor of the student, said that the present research has identified the optimum drying technique, on the basis of nutrient retention, from a set of alternate techniques. A significant higher content of ascorbic acid (16.80 mg/100 g), chlorophyll (3.63 g/100 g), antioxidant activity (67.55%), Zn (35.23 mg/100 g), Fe (57.66 mg/100 g), Ca (2,857 mg/100 g), K (334.23 mg/100 g) and Mg (706.43 mg/100 g) was observed in microwave dried microgreens.

Mr Sarvjit Singh, Additional Chief Secretary, Agriculture and Farmers’ Welfare, Punjab and Vice-Chancellor, PAU; Dr AS Dhatt, Director Research and Dr Sandeep Bains, Dean Postgraduate Studies and Dean, College of Community Science, PAU, congratulated the team for this achievement.
